Anyone else feel like they are baking all.the.time during the Covid-19 shelter-in-place? We had a normal Tuesday baking day at our house, where L and I would bake something, but we've definitely added a day or two since mid-March. After a run on toilet paper, hand sanitizer and hand soap - who would have guessed that the next shortage would be flour, baking powder and oil?!</div>

Do you ever start working on a room knowing that you might work on it over and over again? That's this bedroom. Currently occupied by our youngest inhabitant - she was 1 when we moved in. Now she's almost 5 and has an opinion about her room! She's help create and choose the art in her room as well as some furnishings. The bedroom is 90% sleeping and clothing storage - there are other rooms for the majority of playing. <br />
<br />
I bought a stencil to use in another room of the house, but as soon as L saw it she said "Mermaid tail!" And that started the wheels turning in my head. I have a lot of paint at my house that I use when redoing furniture. With "extra time" on my hands, I decided to use a few of those sample cans!<br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgfM5no6iVl3QG2IoowYOkd00y9J5G6MelLJXvZtu4IAAaBww6gkvia6a8gOwUjpdLSENlqiUn9NbLDWd7Uw3NYHueDknnGdZBF-IrruMVwC-FGHAxP6YAxn9MsKLKDI0CsFNqetFO9ITs/s1600/49791238761_087060e316_c.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" data-original-height="800" data-original-width="600" height="320" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgfM5no6iVl3QG2IoowYOkd00y9J5G6MelLJXvZtu4IAAaBww6gkvia6a8gOwUjpdLSENlqiUn9NbLDWd7Uw3NYHueDknnGdZBF-IrruMVwC-FGHAxP6YAxn9MsKLKDI0CsFNqetFO9ITs/s320/49791238761_087060e316_c.jpg" width="240" /></a></div>
<div class="separator" style="clear: both; text-align: center;">
<br /></div>
<div class="separator" style="clear: both; text-align: center;">
After choosing the colors, it was time to start the stencil.</div>
<br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhnFFwxnFC_TXmUB_gdQYk-uwA60E4vlbPTUSr4yqy3-Bw0HFf1f5LMFOk6KYNnD8SW-oAz0t1oZ72gXAxT7D_AxoXlchehPDkSK2iyAWDF4Y6UWbfvPJZOfS9kgEf_2Ph2UJpoc49cA5c/s1600/49790692688_981b0d67cf_c.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" data-original-height="800" data-original-width="600" height="320" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhnFFwxnFC_TXmUB_gdQYk-uwA60E4vlbPTUSr4yqy3-Bw0HFf1f5LMFOk6KYNnD8SW-oAz0t1oZ72gXAxT7D_AxoXlchehPDkSK2iyAWDF4Y6UWbfvPJZOfS9kgEf_2Ph2UJpoc49cA5c/s320/49790692688_981b0d67cf_c.jpg" width="240" /></a></div>
<div class="separator" style="clear: both; text-align: center;">
<br /></div>
<div class="separator" style="clear: both; text-align: center;">
Not gonna lie - this was some work! The stencil was super easy to use, but the up and down on the ladder for all those rows...whew! You can see where I made a mistake after the first row - I couldn't find where the stencil lined up. Figured it out pretty quick!</div>
<div class="separator" style="clear: both; text-align: center;">

<div class="separator" style="clear: both; text-align: center;">
This is our main bathroom from our home's listing 4 years ago. First two things I did was take out the rugs and the curtains. Painted the walls grey and lived with it for awhile. But I never did like the vanity - too big for the space (length & depth)</div>
<div class="separator" style="clear: both; text-align: center;">
<br /></div>
<div class="separator" style="clear: both; text-align: center;">
Then we updated to <a href="https://www.target.com/p/fish-shower-curtain-calm-gray-pillowfort-153/-/A-50252977?ref=tgt_adv_XS000000&AFID=google_pla_df&fndsrc=tgtao&CPNG=PLA_Bath%2BShopping_Brand&adgroup=SC_Bath&LID=700000001170770pgs&network=g&device=c&location=9010805&ds_rl=1246978&ds_rl=1247068&ds_rl=1248099&gclid=CjwKCAjwvZv0BRA8EiwAD9T2VSU5GH0Us5o6GbVgH2PQTJyA6PGY30ULgIi5-MjF8mbty3XTJ7XG5xoC4ysQAvD_BwE&gclsrc=aw.ds" target="_blank">this curtain</a> as my 4 year old is this bathroom's main user. During the 3 additional year, the yellow tile started cracking around the edges. One day while shopping at our local Habitat Store, we picked up a sink that was a cute small sink. What I didn't know then, was how hard it would be to find a vanity for said sink!</div>

Then one day, on my local Facebook page, someone was giving away this desk. I thought I'd give it a try and see if I could make it a vanity. Y'all, I picked this up in June and finished it in March. There were many moments throughout the process, when I almost gave up and just bought one.</div>

After being gifted 2.5 boxes of tile from my local Buy Nothing Group (do you have one of those where you live? You should check it out!), I felt confident we could move forward with replacing the floor and vanity. Also, on the recommendation of a realtor friend, I decided to paint the walls a color that complemented the shower tile. When we pulled out the vanity, we found this cool wallpaper behind it.</div>

<div class="separator" style="clear: both; text-align: center;">
<br /></div>
<div class="separator" style="clear: both; text-align: center;">
I decided to take up the tile one Sunday afternoon. Assumed it would be a couple hour project and then we'd be ready to move forward. It wasn't. It was at this point that I realized that 99% of the DIYers I follow don't do big projects 😆 When I took up the tile I expected plywood. I found...a soft concrete/mortar. It was about a knuckle deep. (first project pivot) At this point I paused and called in 3 people to quote taking the floor down to the drywall (all 3 would be more than the entire project cost...which makes me feel like my time is definitely worth $$!) At this point we assumed it was a mud bath, which is common in mid-century homes. My Mother-in-law watched a bunch of videos and convinced my father-in-law and I that we could take it up. It should have been the mortar with some metal supports in it.</div>

<div class="separator" style="clear: both; text-align: center;">
Um, it wasn't. After testing a small part with my father-in-law, I went directly to Home Depot and rented a hammer drill...but I had to buy the chisel. It didn't take us long to get the top layer off exposing CONCRETE. (second project pivot) This was so frustrating at this point. I just wanted to lay tile and get back in!</div>

We knew with the <a href="https://www.schluter.com/schluter-us/en_US/" target="_blank">Schluter</a> system that we had decided to use, the floor didn't have to perfectly flat. So we forged ahead simply leveling a few spots.</div>

<div class="separator" style="clear: both; text-align: center;">
But then, when we went to put the toilet back in we realized we had a problem (pivot 3, for just the floor portion). The overall floor is 1/4-1/2" lower than the previously floor, the flange was higher than that. And that's when we realized that the flange was too high in our existing toilet! Not a huge deal, but when we first moved in we had to replace our sewer line - which means that two different plumbers removed and reseated this toilet...I had wondered why the last plumber had used an extra large wax ring :-/ This stumped us for awhile - we realized it right as COVID-19 was showing up in the US. We called our (new) plumber and then decided we didn't want to have anyone in our home for awhile. I figured out what I needed and (literally) ran into Home Depot on March 7th directly to the aisle I needed and grabbed the supplies. And then, when I got home, realized I got a new flange for a 4" pipe and ours is a 3" pipe. We patiently (ish) waiting for the correct size to be sent to our home and then finished the repair.</div>

Have you read<a href="https://www.amazon.com/gp/product/1524762156/ref=dbs_a_def_rwt_bibl_vppi_i1" target="_blank"> Skinnytaste One & Done</a> yet? What a great cookbook!<br />
<br />
<h4>
Ingredients</h4>
<div>
<ul style="background-color: white; box-sizing: border-box; color: rgba(0, 0, 0, 0.95); font-family: raleway, helvetica, sans-serif; letter-spacing: 0.5px; line-height: 28px; margin-bottom: 10px; margin-top: 28px; padding: 0px;"><div class="comp mntl-sc-block mntl-sc-block-html" id="mntl-sc-block_1-0-87" style="background: 0px 0px; border: 0px; box-sizing: inherit; color: black; counter-reset: section 0; font-family: "Crimson Text", serif; letter-spacing: normal; margin: 0px; padding: 0px; vertical-align: baseline;">
<div style="background: 0px 0px; border: 0px; box-sizing: inherit; line-height: 1.5; margin-bottom: 1.75rem; padding: 0px; vertical-align: baseline;">
- 14 oz. carrots (5 medium or 3 to 4 large), peeled and cut into 1-inch pieces<br />
- 2 boneless, skinless chicken breasts (8oz each), cut in 1/2 crosswise<br />
- 1 1/2 tsp. kosher salt<br />
- 1/4 tsp. garlic powder<br />
- Freshly ground black pepper<br />
- Olive oil spray<br />
- 2 tsp. olive oil<br />
- 1 cup chopped white onion<br />
- 1 small fresh jalapeño pepper, seeded and minced, plus 1/2 jalapeño, thinly sliced<br />
- 2 garlic cloves, minced<br />
- 1 1/2 cups corn kernels, fresh or frozen<br />
- 1 cup canned black beans, rinsed and drained<br />
- 2 tbsp. <span style="background-color: initial;">chopped fresh cilantro</span><span style="background-color: initial;"><br />- Juice of 1/2 lime</span><span style="background-color: initial;"><br />- 4 tbsp. jarred salsa</span><span style="background-color: initial;"><br />- 4 slices pepper Jack cheese </span></div>
</div>
<div class="comp mntl-sc-block mntl-sc-block-html" id="mntl-sc-block_1-0-87" style="background: 0px 0px; border: 0px; box-sizing: inherit; color: black; counter-reset: section 0; font-family: "Crimson Text", serif; letter-spacing: normal; margin: 0px; padding: 0px; vertical-align: baseline;">
<div style="background: 0px 0px; border: 0px; box-sizing: inherit; line-height: 1.5; margin-bottom: 1.75rem; padding: 0px; vertical-align: baseline;">
<span style="background-color: initial;">For serving</span><span style="background-color: initial;"><br />- 1/4 cup chopped fresh tomatoes</span><span style="background-color: initial;"><br />- 2 tablespoons chopped scallions</span><span style="background-color: initial;"><br />- 2 tablespoons chopped fresh cilantro<br /><span style="background-color: initial;"> - 1 small avocado, sliced</span></span></div>
</div>
</ul>
</div>
<br />
<span style="background-color: white; font-family: "crimson text", serif;">I skipped the onion, jalapeno, cilantro - because 2/3 of our family are spice wimps and the other 1/3 thinks cilantro tastes like soap! </span><br />
<span style="background-color: white; font-family: "crimson text", serif;"><br /></span>
<div style="background-color: white; font-family: "crimson text", serif;">
<span style="background-color: initial;">In a food processor, working in small batches, pulse the carrots a few times until they resemble grains of rice (don't overprocess or it will get mushy). Spoon the carrots into a kitchen towel, cheesecloth, or paper towels and squeeze out any excess liquid.</span></div>
<div style="background-color: white; font-family: "crimson text", serif;">
<span style="background-color: initial;"><br /></span></div>
<div style="background-color: white; font-family: "crimson text", serif;">
<span style="background-color: initial;">Place each piece of chicken, one at a time, between two sheets of plastic wrap. Using a meat mallet or rolling pin, gently pound each piece until it is about 1/2 inch thick. Season with 3⁄4 teaspoon of the salt, the garlic powder, and black pepper to taste.</span></div>
<div style="background-color: white; font-family: "crimson text", serif;">
<span style="background-color: initial;"><br /></span></div>
<div style="background-color: white; font-family: "crimson text", serif;">
<span style="background-color: initial;">Heat a large deep nonstick skillet over high heat. Spray with oil and cook the chicken until browned and just cooked through, about 2 minutes per side. Transfer the chicken to a plate.</span></div>
<div style="background-color: white; font-family: "crimson text", serif;">
<span style="background-color: initial;"><br /></span></div>
<div style="background-color: white; font-family: "crimson text", serif;">
<span style="background-color: initial;">Reduce the heat under the skillet to medium and add the 2 tsp. oil, the onion, minced jalapeño, and garlic. Cook, stirring, until fragrant, about 2 minutes. Add the riced carrots, increase the heat to high, and add the remaining 3/4 tsp. salt and black pepper to taste. Cook, stirring, until the carrots are crisp-tender, about 6 minutes. Add the corn and beans and cook, stirring, until heated through, 1 to 2 minutes. Stir in the cilantro and the lime juice.</span></div>
<div style="background-color: white; font-family: "crimson text", serif;">

<br />
The best parts of summer involve fresh, juicy fruit and the grill. Usually separate from each other, but <a href="https://www.realsimple.com/food-recipes/browse-all-recipes/summer-pork-chops-recipe" target="_blank">this recipe</a> combines both for a delicious outcome!<br />
<br />
<h4>
Ingredients</h4>
<div>
<span style="font-family: Lora;"><span style="background-color: white;"><span style="letter-spacing: 0.5px;">- 1/4 cup balsamic vinegar</span></span></span></div>
<div>
<span style="font-family: Lora;"><span style="background-color: white; letter-spacing: 0.5px;">- 1 Tbs honey</span></span></div>
<div>
<span style="font-family: Lora;"><span style="background-color: white; letter-spacing: 0.5px;">- 1 clove garlic, finely chopped</span></span></div>
<div>
<span style="font-family: Lora;"><span style="background-color: white; letter-spacing: 0.5px;">- 1 1/2 tsp kosher salt, divided</span></span></div>
<div>
<span style="font-family: Lora;"><span style="background-color: white; letter-spacing: 0.5px;">- 1 tsp freshly ground black pepper, divided</span></span></div>
<div>
<span style="font-family: Lora;"><span style="background-color: white; letter-spacing: 0.5px;">- 8 Tbs olive oil, divided plus more for grill grates</span></span></div>
<div>
<span style="font-family: Lora;"><span style="background-color: white; letter-spacing: 0.5px;">- 4 1/2" thick bone-in pork chops (about 2#)</span></span></div>
<div>
<span style="font-family: Lora;"><span style="background-color: white; letter-spacing: 0.5px;">- 4 cups arugula</span></span></div>
<div>
<span style="font-family: Lora;"><span style="background-color: white; letter-spacing: 0.5px;">- 1 cup loosely packed fresh flat-leaf parsley leaves, torn</span></span></div>
<div>
<span style="font-family: Lora;"><span style="background-color: white; letter-spacing: 0.5px;">- 4 ripe peaches, nectarines or apricots, pitted and sliced</span></span></div>
<div>
<span style="font-family: Lora;"><span style="background-color: white; letter-spacing: 0.5px;"><br /></span></span></div>
<div>
<span style="font-family: Lora;"><span style="background-color: white; letter-spacing: 0.5px;">I used boneless pork chops, mixed greens instead of arugula and peaches. Skipped the parsley.</span></span></div>
<div>
<span style="font-family: Lora;"><span style="background-color: white; letter-spacing: 0.5px;"><br /></span></span></div>
<div>
<div class="step" style="background-color: white; box-sizing: border-box; color: rgba(0, 0, 0, 0.95); font-family: Lora; letter-spacing: 0.5px; line-height: 28px; margin-bottom: 24px; margin-top: 24px;">
<div style="box-sizing: border-box; line-height: 28px; margin-top: 12px;">
<br />Preheat grill to high (450°F to 500°F) and lightly oil grates. Whisk vinegar, honey, garlic, ½ teaspoon each salt and pepper, and 5 tablespoons oil.<br /><br />Pat pork chops dry and brush with remaining 1 tablespoon oil. Season both sides with remaining 1 teaspoon salt and teaspoon pepper. Grill, uncovered, flipping once, until a meat thermometer inserted in thickest portion registers 145°F, 3 to 4 minutes per side. Let rest for 10 minutes.<br /><br />Meanwhile, toss arugula with parsley and peaches. Serve with pork, drizzled with vinaigrette.</div>
<div style="box-sizing: border-box; line-height: 28px; margin-top: 12px;">
<br /></div>
<div style="box-sizing: border-box; line-height: 28px; margin-top: 12px;">
We enjoyed this. The vinaigrette was great! My toddler loved it!</div>

<span style="font-weight: normal;"> - 1 small yellow squash, sliced</span><br />

<span style="font-weight: normal;"> - 1 (14.5 oz) can stewed tomatoes with liquid</span><br />

<span style="font-weight: normal;">I used kielbasa sausage instead of the links and skipped the onion.</span></h4>

Oh man, where to start with the kitchen. This is the listing photo:<br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgRL0ISsSwNeLFa4yvJ9uZGMXeKJtX0kglYz5_hjGt86Uv5J7McJAjP-QF2kJA04cY-_KRbWHO8C-zLGFb8hMUN5o6Ki5wAVESS3yQAMbLXo3PypHRhf9nFtI6nQSwEZte6knlgg4TRCYs/s1600/image8.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" data-original-height="675" data-original-width="1014" height="213" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgRL0ISsSwNeLFa4yvJ9uZGMXeKJtX0kglYz5_hjGt86Uv5J7McJAjP-QF2kJA04cY-_KRbWHO8C-zLGFb8hMUN5o6Ki5wAVESS3yQAMbLXo3PypHRhf9nFtI6nQSwEZte6knlgg4TRCYs/s320/image8.jpg" width="320" /></a></div>
<br />
<br />
As soon as we had the keys, little girl and I changed all the knobs to silver. We bought a black fridge because...that's what color everything else was! After we had been in for a bit, I took down the wallpaper - that was zero fun - and painted. I also put <a href="https://www.target.com/p/devine-color-peel-and-stick-wallpaper-cable-stitch-pattern-mirage-and-metallic-sterling/-/A-23967980" target="_blank">peel and stick wallpaper</a> on the back splash area because a girl can only handle so much fake wood and I had it leftover from a different project.<br />
<br />
We've mulled over lots of ideas with what to do with this space, but they all involve $$ and so I've focused on smaller things I can do for lesser $$. I've changed the light fixture out as well. <br />
<br />
Recently I've been thinking about color on the cabinets. It's kind of hard to tell, but they are a creamy color. I don't hate the color...too much, but the cabinet space (specifically in the uppers) is horrible, so we'll probably go with a different cabinet when we remodel. Which meant that I could have some fun with color for these guys! I knew I wanted dark - I'm drawn to blues, greens, greys - nature neutrals. I saw a color on a blog and loved it! Decided to ask for a sample size when I went to my <a href="https://www.acehardware.com/store-details/07479" target="_blank">local Ace Hardware</a> store. A funny thing happened, even though the paint color was Benjamin Moore - they didn't have the formula for a sample size (something about too little yellow, I think). So I ended up getting a quart for not the list price.<br />
<br />
I should pause and point out that I have a knack for collecting all the sample paints that folks have tried and decided weren't for them (2 of my 3 bathrooms are painted with 1 person's "nah" greys..and I still have others!). So I already had a couple greens and greys that I thought might work. On a whim, I tried the one from Ace (<a href="https://www.google.com/search?q=benjamin+moore+chimichurri&source=lnms&tbm=isch&sa=X&ved=0ahUKEwjg6ezg_snjAhXomuAKHRwBD2gQ_AUIESgB&biw=1403&bih=688" target="_blank">Benjamin Moore Chimichurri</a>). Y'all - I sat on this for MONTHS. It's dark, it's bold. And then one day I went for it! I had a helper and I let her treat the doors like a canvas - she had a blast!<br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgGAF-sABUtQ9wqhOLomIXo4JIPfVBl88YvPEI1rlLy-AyYJbYVVSpiYuIrExaMxnKKHhKEiOwLfmX9wLBdk5vFWOk7sndKtfjcNMZrCJWdnCPak6p5MYQMJQxwCZZAd39FnzgMpxi3ndA/s1600/IMG_20190622_174946+%25281%2529.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" data-original-height="1200" data-original-width="1600" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgGAF-sABUtQ9wqhOLomIXo4JIPfVBl88YvPEI1rlLy-AyYJbYVVSpiYuIrExaMxnKKHhKEiOwLfmX9wLBdk5vFWOk7sndKtfjcNMZrCJWdnCPak6p5MYQMJQxwCZZAd39FnzgMpxi3ndA/s320/IMG_20190622_174946+%25281%2529.jpg" width="320" /></a></div>
<br />
<div class="separator" style="clear: both; text-align: center;">
And the finished product. I was all 😳😮😱 when I finished, but that very quickly turned to 😍</div>
<div class="separator" style="clear: both; text-align: center;">
<br /><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgCf9Pv_gYGx6peZIQgdDXmsIa-uE58lJ1B2pfwWEj9MbVMLT72Ri45rmjQ7ZgAKPrrcDTg3rzlnvGbw4MJ3bYAOBEaC_phcYtpx4nsBkQ78DLC_GSsYiL4d4FyZUL7WsvUoGrOW0btIIQ/s1600/IMG_20190722_164335.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" data-original-height="1600" data-original-width="1200" height="320" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgCf9Pv_gYGx6peZIQgdDXmsIa-uE58lJ1B2pfwWEj9MbVMLT72Ri45rmjQ7ZgAKPrrcDTg3rzlnvGbw4MJ3bYAOBEaC_phcYtpx4nsBkQ78DLC_GSsYiL4d4FyZUL7WsvUoGrOW0btIIQ/s320/IMG_20190722_164335.jpg" width="240" /></a></div>
<div class="separator" style="clear: both; text-align: center;">
<br /></div>
<div class="separator" style="clear: both; text-align: center;">
The light and color are a little funny in this space, so this is a better picture of the actual color.</div>
<div>

I have another big (for me) project planned for this space very soon that should change both how it looks and how it functions for our everyday use.</div>

As soon as I saw <a href="https://www.bhg.com/recipe/sesame-chicken-greens-stir-fry/" target="_blank">this recipe</a>, I knew it would be a hit at our house!<br />
<br />
<h4>
<b>Ingredients:</b></h4>
- 2 Tbls toasted sesame oil<br />
- 2 halves, skinless, boneless chicken breast, thinly sliced<br />
- 2 Tbls finely chopped fresh ginger<br />
- 2 garlic cloves, finely chopped<br />
- 3/4 pound snow peas, trimmed<br />
- 3 Tbl reduced -sodium soy sauce<br />
- Juice of 1 orange<br />
- 4 cups chopped mustard greens<br />
- 1/4 cup sesame seeds, toasted<br />
<br />
<br />
I skipped the ginger and sesame seeds - didn't have them on hand. I also subbed pineapple juice for the oj due to an allergy.<br />
<br />
<ul class="instructions-section" style="background-color: white; box-sizing: border-box; color: rgba(0, 0, 0, 0.95); font-family: "Source Sans Pro", sans-serif; letter-spacing: 0.5px; line-height: 28px; list-style: none; margin-bottom: 28px; margin-top: 25px; padding-left: 0px;">
<li class="subcontainer instructions-section-item" style="box-sizing: border-box; list-style: none; margin-bottom: 48px;"><br /><div class="section-body" style="box-sizing: border-box; letter-spacing: 0px; line-height: 28px; margin-top: 8px;">
<div style="box-sizing: border-box; letter-spacing: 0px; line-height: 28px; margin-bottom: 28px;">
In an extra-large skillet heat 1 tablespoon vegetable oil and 1 tablespoon sesame oil over medium-high; add chicken in a single layer. Cook without stirring 2 minutes or until browned. Cook and stir 2 minutes more or until chicken is cooked through. Transfer to a plate.</div>
</div>
</li>
<li class="subcontainer instructions-section-item" style="box-sizing: border-box; list-style: none; margin-bottom: 48px;"><label class="checkbox-list" for="recipe-instructions-label-0-1" style="box-sizing: border-box; font-size: 17px;"><input class="checkbox-list-input" id="recipe-instructions-label-0-1" style="font-family: inherit; font-size: inherit; font-stretch: inherit; font-style: inherit; font-variant: inherit; font-weight: inherit; left: 0px; margin: 0px; opacity: 0; padding: 0px; position: absolute; top: 0px;" type="checkbox" value="" /></label><div class="section-body" style="box-sizing: border-box; letter-spacing: 0px; line-height: 28px; margin-top: 8px;">
<div style="box-sizing: border-box; letter-spacing: 0px; line-height: 28px; margin-bottom: 28px;">
Add remaining sesame oil to skillet; heat over medium-high. Add ginger and garlic; cook and stir 30 seconds. Add peas; cook and stir 1 to 2 minutes or until crisp-tender. Add soy sauce and juice; simmer 1 minute. Stir in greens, chicken, and sesame seeds. If desired, sprinkle with crushed red pepper. Serves 4</div>

One of the funniest thing about the listing for our home was that it said something about the backyard being ready for a cocktail party. I don't know what you envision when you think of a cocktail party, but I can tell you that no lady in heels wanted to be in our backyard...or our back deck. I loved the size of our deck the first time I saw it...and hated the red - probably because of the brick.<br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhS9qJZN7oFmTO4C9n8Kn38QpfL1ltJCQMozGhhNVKTH0r9zBypxWKB0lz07aPnx1D2mdO-puaEFrScqvqtfsgL4kkF-Ewx3LYW9SvF6XUu7FH8Naqadi0giOpF8Kg3zHItLJFiZQXFB4A/s1600/image25.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" data-original-height="675" data-original-width="1014" height="213" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhS9qJZN7oFmTO4C9n8Kn38QpfL1ltJCQMozGhhNVKTH0r9zBypxWKB0lz07aPnx1D2mdO-puaEFrScqvqtfsgL4kkF-Ewx3LYW9SvF6XUu7FH8Naqadi0giOpF8Kg3zHItLJFiZQXFB4A/s320/image25.jpg" width="320" /></a></div>
<br />
I'll be honest - moving in with an almost 1 year old and so many "immediate" redo needs....we didn't take care of our deck. We aren't convinced it was built to too high of a quality standard either, but we didn't love the wood like we should have. So fast forward to this year and it was something I both wanted and needed to work on. We replaced a few boards and needed to stain all of them. I should say that our long term goal for this space is to make it screened in. The mosquitoes around here are no joke! We love our creek and our "it rained too much" pond, but they breed mosquitoes. We think that screening this in will enable us to use this space way more than we do now.<br />
<br />
I had a couple goals for this project:<br />
- remove the bench. First, the wood was starting to look a little bad, but also, I had a feeling we'd gain a bunch more square footage with it gone. In the picture above it's behind the tree bush on the right and runs the length of the deck. We've enjoyed having it for our toddler to sit on pretty safely, but the condition of the wood was jeopardizing that.<br />
- spend little to zero money. The week after I decided to start this project, my husband was laid off from his job. I was excited about the extra time & set of hands I'd have to do this project, but definitely wanted to watch what was spent.<br />
<br />
So I was off to shop in our little shop. I found the original stain from the previous application and decided that I could live with the spindles being red. I should add that not only did I not love the color, it was really hot on your feet as this area gets almost all day sun.<br />
<br />
Removing the bench was NO JOKE. While I'm pretty sure they used 20 nails for the whole deck floor, it felt like they used 20 nails on each leg (6) of the bench. There were at least 5 nails on each leg + 3-4 nails to secure the top section by the leg to the railing. I started by trying to pull them out, but the railing is in such delicate shape that it was breaking. So we switched to simply cutting the nails out. It probably saved me a day's work. And immediately it felt like the deck doubled in size. <br />
<br />
On a trip to Home Depot (maybe related to this...I had to get a new jigsaw blade), but maybe related to another project at home or work, I decided to swing by the paint section. I was thinking about green spindles and a brown floor when I started the project, but the change to "spend very little $$" changed that idea. As I looked at paint cards for the browns, I thought I had a good idea of what I wanted, but wanted to think it over a bit. As I normally do, I swung by the Oops section. And there it was: a gallon of exterior paint...almost exactly what I had picked on one of the cards...for $8! What?!?! I swooped that can up and cradled it like a baby!<br />
<br />
While I knew I didn't want to keep the whole bench, I decided to keep about 1/2 of it and put it in a small section that it would fit perfectly in (for now, I still think it's too big!). I grabbed some green paint that I had just enough of and waalaa. <br />
<br />
Put the bench, table, chairs and umbrella back. Added a strand of lights that I found on the curb and we were back in business! We've eaten out here twice before it started to be 90 at 9am... ;-)<br />

I skipped the onions, sesame seeds & red pepper flakes - didn't have them on hand. You could also use 3 cups of cooked chickpeas, but for the me the cans are easier.</div>

Add the red onion, bell pepper, and chickpeas into the bowl of your slow cooker. </div>

In a small bowl, whisk together the tamari, vinegar, maple syrup, garlic, ginger, red pepper flakes, and sesame oil. Pour the sauce into the slow cooker and stir well. </div>
</div>

<li class="wprm-recipe-instruction" style="background: 0px 0px; box-sizing: border-box; font-size: 1em; font-stretch: normal; font-variant-east-asian: normal; font-variant-numeric: normal; line-height: inherit; list-style-position: outside; list-style-type: decimal; margin: 0px 0px 0px 30px; padding: 0px; position: relative;"><div class="wprm-recipe-instruction-text" style="box-sizing: border-box;">

Cover the slow cooker and set it to cook for 3 hours on high heat, or 6 hours on low heat. If you need to cook it longer due to your schedule, I'd recommend adding 2-4 tablespoons of water to the mixture to help prevent the sauce from over-cooking. (If you have a super-nice slow cooker, it might also give you the option to have the cooker start cooking later in the day on a timer.) </div>
</div>
</li>
<li class="wprm-recipe-instruction" style="background: 0px 0px; box-sizing: border-box; font-size: 1em; font-stretch: normal; font-variant-east-asian: normal; font-variant-numeric: normal; line-height: inherit; list-style-position: outside; list-style-type: decimal; margin: 0px 0px 0px 30px; padding: 0px; position: relative;"><div class="wprm-recipe-instruction-text" style="box-sizing: border-box;">

Once the cooking is done, give the chickpeas a stir and serve them warm over a bed of white rice (or cauliflower rice) with a sprinkling of green onions and sesame seeds on top. </div>
</div>

<li class="wprm-recipe-instruction" style="background: 0px 0px; box-sizing: border-box; font-size: 1em; font-stretch: normal; font-variant-east-asian: normal; font-variant-numeric: normal; line-height: inherit; list-style-position: outside; list-style-type: decimal; margin: 0px 0px 0px 30px; padding: 0px; position: relative;"><div class="wprm-recipe-instruction-text" style="box-sizing: border-box;">

<br /></div>
<div style="text-align: left;">
Ingredients:</div>
<div style="text-align: left;">
<br /></div>
<div style="text-align: left;">
</div>
<ul>
<li>1 15oz can black beans, rinsed</li>
<li>1 Tbl finely chopped chipotles in adobo </li>
<li>1/4 small pineapple, cored and cut into thin 1/2" pieces</li>

<li>1 small red onion, thinly sliced</li>
<li>8 small corn tortillas, warmed</li>

<div>
<br /></div>
<div>
Instructions:</div>
<div>
<ol></ol>
</div>
<br />
<ol>
<li><span style="font-family: inherit;">Heat oven to 425 degrees F or an outdoor grill to medium-high. Tear off four 12" squares of foil and arrange on two baking sheets.</span></li>
<li>Toss together the beans and chipotles, then divide among the pieces of foil. Top with the pineapple, peppers and onion. Cover with another piece of foil and fold each edge up and over three times. Roast or grill (covered) for 15 minutes</li>
<li>Transfer each packet to a plate. Using scissors or a knife, cut an “X” in the center and fold back the triangles. Spoon the mixture into tortillas and top with cilantro and sour cream, if desired.</li>
</ol>

<ol>
<li>Place the cauliflower in a steamer basket and cook over medium-high heat until just tender, 8 to 10 minutes. Set aside.</li>
<li>Meanwhile, preheat the oven to 350° F. Line a rimmed baking sheet with parchment paper and line a large platter, or another baking sheet, with wax paper.</li>
<li>Place the chickpeas into a large mixing bowl and using a potato masher or fork; mash the chickpeas until they are crushed. Add the cauliflower and mash again until the ingredients are well smashed (but not smooth.) Add the spinach, red peppers, scallions, garlic, and parsley and mix well. Stir in the cumin, turmeric, 1 teaspoon of salt, and 1/4 teaspoon of pepper and mix. Add the eggs and 1/2 cup of the panko, stirring to combine all the ingredients.</li>
<li>Place the remaining 1/4 cup of panko breadcrumbs in a shallow dish. Take a handful of the chickpea mixture and shape into a patty approximately 1/2-inch thick. Coat lightly with the panko. Place the formed patty on the wax paper lined platter or baking sheet. Repeat with the remaining chickpea mixture; you will have 8 to 10 patties.</li>
<li>Heat 2 tablespoons of the oil in a large nonstick skillet over medium heat until shimmering. Place half the patties in the pan, and cook undisturbed until golden brown, about 4 minutes. Flip the patties and cook until the second side is golden, about 4 minutes more. Transfer the patties to the parchment lined baking sheet. Wipe the skillet clean with paper towel, heat the remaining oil, and cook the remaining patties. Add these to the baking sheet, place it in the oven and cook for 10 minutes.</li>
<li>Transfer the patties to a platter, season with additional salt and pepper to taste, and serve hot with the sauce.</li>
</ol>
<div>
This recipe was labor intensive! It makes 6 servings and says it takes 1 hour and 15 minutes. That's probably accurate. I ALWAYS forget to thaw frozen spinach when it's called for in a recipe! So we had to quick thaw it and it was probably still too wet. Most of my patties didn't hold together and I'm not sure why you finish it off in the oven (which I turned on about an hour too early :-/).<br />

The flavor of these was GREAT and I loved all the veggies we were getting! I might make this again, but would probably substitute the cauliflower part with cauliflower rice....maybe?</div>

This dish was better received than I thought it would be. We all loved it! One pan, 2 steps - that's a winner in my book! The suggestion is to serve it with rice, couscous or quinoa, but we ate it as is.</div>

<div style="text-align: center;">
<br /></div>
<div style="text-align: center;">
<br /></div>
<div style="text-align: left;">
Ingredients:</div>
<div style="text-align: left;">
</div>
<ul>
<li>4 boneless pork chops (1" thick)</li>
<li>Kosher salt & freshly ground pepper</li>
<li>1/2 cup BBQ sauce</li>
<li>1/2 cup hot pepper jelly </li>
<li>2 cups frozen lima beans, thawed</li>
<li>2 cups frozen corn kernels, thawed</li>
<li>1 15.5oz hominy, drained & rinsed</li>
<li>2 scallions, sliced (white & green parts separated)</li>
<li>1 tsp fresh thyme</li>
<li>4 Tbls unsalted butter, melted</li>
</ul>
<div>
I omitted the hot pepper jelly (at least 2 of us would have paused before eating that!) and somehow I missed adding hominy to my grocery list, so we added edamame (which is a favorite vegetable of my toddler). </div>
<div>
<br /></div>
<div>
Instructions: </div>
<div>
<ol></ol>
</div>
<br />
<ol>
<li><span style="font-family: inherit; font-size: 16px; font-style: inherit; font-weight: inherit;">Preheat a grill to medium high. Lay out four 12-by-18-inch sheets of heavy-duty foil. Season the pork chops on both sides with salt and pepper. Whisk the barbecue sauce and hot pepper jelly in a small bowl. Remove 1/3 cup of the sauce to a separate bowl and brush all over the pork chops; reserve the remaining sauce.</span></li>
<li><span style="font-family: inherit; font-size: 16px; font-style: inherit; font-weight: inherit;">Mix the lima beans, corn, hominy, scallion whites, thyme and melted butter in a large bowl. Season with salt and pepper.</span></li>
<li>Divide the vegetable mixture among the foil sheets, mounding it slightly. Top each mound with a pork chop. Bring the 2 short ends of the foil together and fold twice to seal; fold in the sides to form a packet.</li>
<li>Grill the packets pork-side down, 6 minutes. Flip and cook 2 more minutes. Meanwhile, heat the reserved sauce in a small saucepan or in the microwave. </li>
<li>Carefully open the packets and spoon some of the sauce on the pork chops; sprinkle with the scallion greens. Serve with the remaining sauce.</li>
</ol>
<div>
<br /></div>
<div>
Everyone in our family liked this! The grilling took way longer than in the instructions which could be because I didn't thaw my veggies....make sure you use the meat thermometer!</div>

<br />
I've realized I need to keep a list of major home projects somewhere so I can remember when we've done things. So what better place than my blog! These are listing photo for the house:<br />
<div class="separator" style="clear: both; text-align: center;">

<div class="separator" style="clear: both; text-align: left;">
We bought the house in 2016 and moved in quickly. We did an air test before we moved in (it had been vacant and with my mold allergy, I could smell something was off as soon as I walked in. Thankfully it wasn't mold!) The tester told us "you should take the carpets out, but since you don't have small animals or crawling children you should be fine for a bit"....we had a 9 month old. We ripped out the carpet and lived on painted subfloors for a year while saving up money to redo the floors. I'll tell more about that when I post about the floor redos.</div>
<div class="separator" style="clear: both; text-align: center;">

<div class="separator" style="clear: both; text-align: center;">
<br /></div>
<div class="separator" style="clear: both; text-align: left;">
In 2017 we had the fireplace cleaned, even though we'll probably never use it....it never gets cold here (now I've probably jinxed myself for this winter!). The man that cleaned it said to have him back after we burn a cord of wood....we will see how long that takes us!</div>
<div class="separator" style="clear: both; text-align: left;">
<br /></div>
<div class="separator" style="clear: both; text-align: left;">
We also removed the bushes in the front of the house. While they defined the sidewalk, they creeped me out - like I would look out my window and see a pair of eyeballs on the other side of them (you can decide human, deer or other ;-))</div>

In 2018 we had the great opportunity to replace both our water and sewer lines. Please not the sarcasm in that sentence. Not something that was on our radar as first time homeowners, but hopefully something we never have to do again in this house! We removed the railing from the bridge - well, I did, in a moment of "take it off and replace the whole thing!" - but we haven't replaced it. haha It does work well in it's new spot, but I think I want to paint it.<br />

In 2019 we had our ducts cleaned in an effort to continue improving the air quality of the house. The man performing the work said "normally these don't look this good as soon as we open them." Thanks Mom for teaching me to Spring Clean! This process should be repeated every 5 years or after a major renovation (please let us do a major renovation before that!). We also removed the shutters from the front of the house. I'm more of a minimalist girl and these shutters were damping that vibe. When we took them off there were all kinds of hornet nest behind them! :-O We are planning to having screens for all the windows by the end of the year (fingers crossed, we have 5 left).<br />

We were sent samples of Simple Truth Organic Thin & Crispy Vegan Pizza Crust & Pizza Sauce. We rounded out our samples with Kroger Pizza Blend Cheese, Kroger Pepperoni and Kroger Bella Mushrooms. What can I say - we're a Kroger loving family!</div>

<div class="separator" style="clear: both; text-align: center;">
Overall, this was good, but I'm not sure we'll purchase the crust again. The "vegan" part didn't affect the taste as far as I could tell. I LOVED that the crust was crispy (like a cracker almost), but where the toppings were it was a wee bit softer. The texture was a+. I felt like the crust had zero taste. I did, however, enjoy the taste of the sauce. I don't like my pizza sauce overly spicy or sweet and this one fit the bill - this we will purchase again.</div>

My daughter LOVED the freeze dried fruit and asks for them for a snack...instead of fruit snacks! That's a pretty big deal in toddler world! Being able to give our kiddos a healthy snack - even when the fruit isn't in season - is important to me!<br />

I have to say I wasn't a fan of the creamer...it clotted and didn't have much taste, in my opinion. It did make me realize how much sugar is in the flavored creamers I usually use and I've since cut back.<br />

The pasta was a hit! I would buy again if we had friends over that couldn't have gluten, but probably wouldn't buy in place of our regular pasta.<br />

<br />
I recently received a #FreeSample of Simple Fresh Mint <a href="https://www.simpletruth.com/products/fresh-mint-cleaning-wipes/" target="_blank">wipes</a> and paper towels and these wipes might have saved my marriage! I am not a "disinfectant" wipes person and even more so since having a baby. I've always felt like they were a bunch of chemicals and I've been afraid for her to grab them and do what babies do....put them in her mouth! Or hold them and then put her hands in her mouth! But these wipes take away that fear AND THEY WORK! My toddler noticed the smell immediately saying "What's that smell Mommy? It smells good" And after almost a week without water, I can fully support these wipes and will continue to buy them for our family.<br />
<br />
I thought the paper towels were very absorbent and thick. If these came in the "pick-a-size" I would buy them for our family.<br />

Recently we were asked to sample a few products and share our thoughts. We were excited when our box contained pretzels & almonds...always a good start to trail mix! We added marshmallows, raspberry M&Ms (toddler pick), popcorn and jelly beans (another toddler pick!) for a yummy afternoon snack. She loves to help make & mix things and trail mix is perfect for that. I've also found that while she might pick things out to eat (all the pretzels at the same time), she eats it all.<br />
<br />
I like that it is easy to put together and tastes delicious! Kroger pretzels are one of our favorite brands (toddler prefers the sticks :-)). And she's loving the almonds too!<br />
