Cilantro-lime Chicken with Avocado Salsa
Chicken:
2 Tbl minced fresh cilantro
2 1/2 Tbl fresh lime juice
1 12/ Tbl olive oil
4 (6oz) skinless, boneless chicken breast halves
1/4 tsp salt
cooking spray
Salsa:
1 cup chopped plum tomato (about 2)
2 Tbl finely chopped onion
2 tsp fresh lime juice
1/4 tsp salt
1/8 tsp pepper
1 avocado, peeled and finely chopped
To prepare chicken: combine first 4 ingredients in a large bowl; toss and let stand 3 minutes. Remove chicken from marinade; discard marinade. Sprinkle chicken evenly with 1/4 tsp salt. Heat a grill pan over medium-high heat. Coat pan with cooking spray. Add chicken to pan; cook 6 miutes on each side or until done.
To prepare salsa: combine tomato and next 4 ingredients in a medium bowl. Add avocado; stir gently to combine. Serve salsa over chicken.

I went to the grocery twice last week - and both times forgot the cilantro. I'm not a big fan of cilantro so I think I was blocking it from my mind. I didn't use - but might next time.
I used the George Foreman as opposed to starting up the grill.
LOVED this! I was surprised at how after 3 minutes of marinade the chicken tasted like lime - YUM! And I'm a sucker for the fresh "salsa".
