What's Cookin Wednesday - Oat Applesauce Muffins

adapted from Allrecipes   Anyone else feel like they are baking all.the.time during the Covid-19 shelter-in-place?  We had a normal Tuesday baking day at our house, where L and I would bake something, but we've definitely added a day or two since mid-March.  After a run on toilet paper, hand sanitizer and hand soap - who would have guessed that the next shortage would be flour, baking powder and oil?! This recipe was inspired by one thing: my kiddo doesn't like the applesauce packets anymore and we needed to use them up! Ingredients     1 cup rolled oats       1 cup buttermilk       1 cup flour       1 tsp baking powder       1/2 tsp baking soda       1/2 cup brown sugar       1/2 cup applesauce (or 1 pouch ;-))       1 egg Ingredient Checklist Step 1 Place oats in a small bowl, pour in buttermilk. Let sit for two hours at room temperature. Step 2 Preheat oven to 375 degrees F. Grease 12 muffin cups or line with paper muffin liners. Ste

And that started the wheels turning in my head.  I have a lot of paint at my house that I use when redoing furniture.  With "extra time" on my hands, I decided to use a few of those sample cans! After choosing the colors, it was time to start the stencil. Not gonna lie - this was some work!  The stencil was super easy to use, but the up and down on the ladder for all those rows...whew!  You can see where I made a mi
